Thessaloniki’s winter energy comes alive in December, with markets and live music. Edessa’s waterfalls cascade year-round. Pozar’s thermal springs steam in the cold air. Naoussa produces Xinomavro, one of Greece’s most respected wines. Drama’s seasonal attraction, Oneiroupoli Christmas Village, draws Greek families from across the country. Crafts, regional food, performances, and lights everywhere. It’s joyful without being tacky.
 
This is a small group with time to actually enjoy each place instead of rushing through a checklist.

Most people think of Greece as a summer destination. Cycladic islands and beach time. But let me tell you about Northern Greece and Thessaloniki in December. 
The city lights up for the season. Not in that overdone, commercial way, but with a warmth that feels earned. Thessaloniki in December has energy. Street vendors roast chestnuts on corners. Pastry shops display tsoureki and trigona panoramatos in their windows.  You’ll find boutiques selling things you won’t see in the usual chain stores. 
Cafés line the waterfront with views of Mount Olympus when the sky clears. But honestly, cafés are everywhere here, every corner, side streets, tucked between shops. Locals sit for hours, not because they have nothing to do, but because this is how they live. Coffee isn’t quick here. It’s connection.
I chose this trip because of Thessaloniki and what sits around it. Northern Greece doesn’t get the attention the islands do, but the region has depth, mountains, rivers, wine country, thermal springs, villages that still feel untouched.
For this trip, I focused on what makes sense in five days. An hour from Thessaloniki, you have Edessa’s waterfalls where water rushing over limestone cliffs year-round. Then Pozar, where you soak in natural thermal springs while cold air hits your face and steam rises around you. Naoussa is Greece’s serious wine region, where Xinomavro has been grown for centuries. I chose to add Drama’s Oneiroupoli that will bring the holiday spirit. 
There’s more to explore up here. Vergina’s royal tombs, Veria’s Byzantine churches, the lakes of Prespa, Halkidiki’s beaches in summer, hiking routes through Zagori and more, but this trip isn’t about cramming everything in. 
This trip is for people who want to enjoy the holiday season but skip the chaos. Northern Greece in winter is quiet, authentic, and honestly, underrated.

Jewish Thessaloniki 

Thessaloniki was once home to one of Europe’s largest Sephardic Jewish communities. Before World War II, Jews made up nearly half the city’s population. The community was devastated during the Holocaust.
Today, remnants of that history remain: synagogues, the Jewish Museum, neighborhoods where Ladino was spoken. We can arrange time to explore this history if your group is interested. 
It’s not the focus of this trip, but it’s available for those who want deeper context.
